Some of you already know that my Dad has hurt his back very bad. He has been in the hospital for about 3 days now and still no relief of the pain. He had a epidural and it has not helped. Please pray that he will get better soon. He has not worked in several days so he is about to go crazy. He loves what he does, although very high stress. HE needs to be at work. I'm sure he's lying in the hospital bed thinking about work non-stop! I think my mom is pretty stressed as well, so pray for both of them. Of course the priority is for him to get better, the Dairy can wait!!

When will the projects end??
Our tiny bathroom, notice the wallpaper....original to the house......1970!
It will soon have bead board walls!
Have you ever seen a toilet in a shower?
new cabinet for bathroom
Bar being propped
inside bar....not painted.....no doors
new granite top for bathroom, which has been at the foot of our bed for several weeks.
torn out bathroom
The projects will probably never end! Just as I think they are, another begins. Jason has already figured out a way to enclose our laundry room into the house. He is so clever! I'm so thankful for a handy husband. I can't wait to show the finished product!

Comfort Food Confession!!!!!!!!!!
Onions sauteing
Onions and Mushrooms
Onions and Mushroom with soy and white wine
Flour and butter.....making a roux
After chicken stock and milk have been added
Casserole with topping before I put it on......you
toss the cheese and bread crumbs with a little olive oil
My bowl of tuna noodle casserole for lunch!!!!!
And I had a bowl for dinner!!!!!
OK, a lot of you who know me are going to be shocked by this.....I made a tuna casserole today! Before you judge me, know that it was a gourmet version of the dish. I found the recipe on Alexis Stewarts blog (Martha's daughter). I read the recipe and had to make it. I've never made this dish or if I recall correctly, I've never eaten it. My mother, I'm sure would like me to mention that she NEVER made this for us. I just read the recipe and had to make it. It only has 1 can of tuna packed in olive oil. Alexis mentioned in her blog that she added extra tuna but I didn't want to get too crazy. Fresh ingredients....1 diced onion and 10 oz sauteed in a little butter then cooked in soy sauce and white wine until evaporated. The recipe called for Sherry (I didn't have any and usual don't use it anyway) but I used white wine. Then of course the cream sauce is make from scratch, a little butter, a little flour, still in chicken stock and milk. Then flake in tuna, stir together with egg noodles, top with cheddar cheese and bread crumbs. I just want to say if you make tuna casserole the old fashion way with cream of whatever, do not take offense to this. I just try to avoid the canned and processed stuff if at all possible. If you are looking for a great comfort food dish, try this. Link to recipe is http://www.epicurious.com/recipes/food/views/109434. P.S. this recipe was published in GOURMET MAGAZINE, the god of food mags. If anyone tries it let me know.
My pot of herbs
This is a photo of my new pot of herbs. My mom's sweet friend Mitzi planted it for me. The pot contains parsley, cilantro, rosemary, thyme, and oregano. It makes me very happy!!
