OK, a lot of you who know me are going to be shocked by this.....I made a tuna casserole today! Before you judge me, know that it was a gourmet version of the dish. I found the recipe on Alexis Stewarts blog (Martha's daughter). I read the recipe and had to make it. I've never made this dish or if I recall correctly, I've never eaten it. My mother, I'm sure would like me to mention that she NEVER made this for us. I just read the recipe and had to make it. It only has 1 can of tuna packed in olive oil. Alexis mentioned in her blog that she added extra tuna but I didn't want to get too crazy. Fresh ingredients....1 diced onion and 10 oz sauteed in a little butter then cooked in soy sauce and white wine until evaporated. The recipe called for Sherry (I didn't have any and usual don't use it anyway) but I used white wine. Then of course the cream sauce is make from scratch, a little butter, a little flour, still in chicken stock and milk. Then flake in tuna, stir together with egg noodles, top with cheddar cheese and bread crumbs. I just want to say if you make tuna casserole the old fashion way with cream of whatever, do not take offense to this. I just try to avoid the canned and processed stuff if at all possible.
