Belated Sweetheart Blog!!

I so meant to blog about my sweatheart on V-Day but with cooking 2 full coarse meals for 12 people plus me and my sweetie and going to the doctor for a weird rash on my face, I just didn't get around to it. Sadly enough I did not even buy Jason a card. But I did buy him a bag of his favorite chocolate truffles and believe it or not he gave me the exact same thing. I really love to remember our wedding day on Valentines!! It was such a great day (minus the flowers in the church, if you were there you know what I'm talking about) and sooooo exciting. I can remember wondering what are life would be like years down the road. Now three years later, I love my sweet husband so much more! And know him so much better. Considering the fact that we dated only 3 months and were engaged for 6, we really didn't know each other that well. Good thing that we both knew, through faith, that God wanted us to be together!!! What a wonderful journey it has been!!! Maybe when I tell Jason I blogged about him, he was actually read this!! I LOVE YOU J!!

Weird Week....medically speaking

Ok, so Tuesday night I noticed a red spot on my face. I put some lotion on it and thought maybe I had some dry skin. Wednesday morning the spot was worse and my chin was itching very bad and I could feel lots of tiny bumps. So I took some benadryl and put some hydrocortisone on my face. Thursday when I woke up it was even worse and it itched and burned. Well I went to the doctor and he called it some crazy name, commonly called St. Elmo's fire. I got an antibiotic and it is a little better. Just some random germ I picked up that decided to take root on MY FACE!

So Friday morning I'm washing dishes and a glass begins to fall, of course I try to save it. I cut myself!!! I walked calmly into the bathroom and told Jason " I think I need stiches". Well, I did! 6 stiches in my left hand, right under my middle finger. There are still lots of dirty dishes to wash but I won't have to do them! I guess that's good. I'm headed to Birmingham for a Baby shower for my sweet friend Kim. I hope my driving its not effected by my injury!!

J's Garage Sale Finds

This is just one of my husband's amazing garage sale finds. 6 antique windows for $5.00!! That's $0.83 per window! They are worth far more!! I'm not sure what to do with them. I already have one old stained glass hanging in the house. I would love to hear some good ideas!!!!! Bring them on!!!!

Meet Miranda

Here are some pictures of our sweet puppy dog. The main reason for taking these pictures was to send one to my mom to put in her kitchen window along with her other grandchildren. I think she needs a picture of her "Granddog". Which if anyone knows my mom, shes not exactly an animal lover but I think this might help her. I must say that Miranda is the sweetest dog and loves ALL humans!!!

Dairy Man is Down!

Some of you already know that my Dad has hurt his back very bad. He has been in the hospital for about 3 days now and still no relief of the pain. He had a epidural and it has not helped. Please pray that he will get better soon. He has not worked in several days so he is about to go crazy. He loves what he does, although very high stress. HE needs to be at work. I'm sure he's lying in the hospital bed thinking about work non-stop! I think my mom is pretty stressed as well, so pray for both of them. Of course the priority is for him to get better, the Dairy can wait!!

When will the projects end??

Our tiny bathroom, notice the wallpaper....original to the house......1970!
It will soon have bead board walls!

Have you ever seen a toilet in a shower?

new cabinet for bathroom

Bar being propped

inside bar....not painted.....no doors

new granite top for bathroom, which has been at the foot of our bed for several weeks.

torn out bathroom

The projects will probably never end! Just as I think they are, another begins. Jason has already figured out a way to enclose our laundry room into the house. He is so clever! I'm so thankful for a handy husband. I can't wait to show the finished product!

Comfort Food Confession!!!!!!!!!!

Onions sauteing

Onions and Mushrooms

Onions and Mushroom with soy and white wine

Flour and butter.....making a roux

After chicken stock and milk have been added

Casserole with topping before I put it on......you
toss the cheese and bread crumbs with a little olive oil

My bowl of tuna noodle casserole for lunch!!!!!
And I had a bowl for dinner!!!!!

OK, a lot of you who know me are going to be shocked by this.....I made a tuna casserole today! Before you judge me, know that it was a gourmet version of the dish. I found the recipe on Alexis Stewarts blog (Martha's daughter). I read the recipe and had to make it. I've never made this dish or if I recall correctly, I've never eaten it. My mother, I'm sure would like me to mention that she NEVER made this for us. I just read the recipe and had to make it. It only has 1 can of tuna packed in olive oil. Alexis mentioned in her blog that she added extra tuna but I didn't want to get too crazy. Fresh ingredients....1 diced onion and 10 oz sauteed in a little butter then cooked in soy sauce and white wine until evaporated. The recipe called for Sherry (I didn't have any and usual don't use it anyway) but I used white wine. Then of course the cream sauce is make from scratch, a little butter, a little flour, still in chicken stock and milk. Then flake in tuna, stir together with egg noodles, top with cheddar cheese and bread crumbs. I just want to say if you make tuna casserole the old fashion way with cream of whatever, do not take offense to this. I just try to avoid the canned and processed stuff if at all possible. If you are looking for a great comfort food dish, try this. Link to recipe is http://www.epicurious.com/recipes/food/views/109434. P.S. this recipe was published in GOURMET MAGAZINE, the god of food mags. If anyone tries it let me know.
